Vegan Chili Recipe


As a new Vegan I am in transition to the lifestyle and the food.  Actually I realized that I am almost a Vegan now so the transition should not be too difficult.  I am going to share a few recipes along the way.
 

Easy Vegan Chili

2 cups green lentils
1 can of black beans
1 can of red beans
1 can of corn
¼ cup of Vegeta (or vegetable soup broth powder)
Can of tomato paste
3 Tbsp of Cumin
1 Tbsp of Cinnamon
Chili powder to taste

Boil the green lentils until soft.  Drain and add the canned beans and corn.  You can also use boiled beans and fresh corn but I had canned so that is what I used.  Add the Vegeta to the water and whisk.  Pour tomato paste and water on top of the beans and add the spices.  Simmer for 20 minutes.  Serve with whole grain bread at home or taco chips at parties!
